If you are paranoid, and you should never miss out an opportunity to do so, you can unplug your hard drives before starting tails. If there is no physical connection there cant be any data transfer.
If you dont want to mess around with cabels all the time you could encrypt your harddrives which is a good idea for a bunch of reasons other than that. This way a virus operating within tails would need to circument the HD crypto.
If you ask me, tails looks quite trustworthy. Is it bullet proof in a threat model with a state level attacker? No one can guarantee.
If you have serious tails business to work on, why not use a burner laptop for that?
