How does escrow protect vendors from bad buyers?

As I understand it, the marketplace holds the buyer’s payment until the buyer confirms they have received the goods/services promised by the vendor. What is there to stop the buyer receiving the goods and then denying they arrived, and possibly making accusations of fraud against the vendor?

Can signed-for/recorded/tracked delivery services help prevent this, by allowing the vendor to KNOW the buyer received the goods?

But most pertinently, what if the vendor sends unrecorded?

It does not protect vendors from bad buyers, the thing that protects vendors from bad buyers is the vendors reputation (in case of dispute) combined with the ability to view the buyers stat / history.
